For a broad overview of how frequently your Canvas course is being accessed, and to view individual access rates by students you can use the View Course Analytics link on the Home page of your course.
Course analytics also provide a summary of missing, late and on time submissions, as well as grade ranges and percentiles for assignment activities.
The view defaults to graph format but use the toggle button in the top right hand corner of the page to show more detail.
